Fresh Salsa

salsaThank you FFTS member Ani for this post. Salsa is a wonderful addition to the Recipe Box. It can jazz up many dishes. Ani says:

I got this recipe from “Betty Crocker Living with Cancer Recipes”, but I tweeked it a little. I used to use ketchup but I have replaced ketchup with this salsa. Most of the time, I double the recipe. Garlic has many beneficial health properties and cilantro actually binds with heavy metals in the body and expels them, so this recipe has a medicinal purpose as well. Imhotep said to let your food be your medicine and let your medicine be your food. Enjoy everyone.

4 large tomatoes, seeded, chopped and drained (4 cups)
1 medium onion, chopped (1/2 cup)
3 cloves of garlic, finely chopped
1/2 cup chopped seeded fresh jalapeno chiles
1/2 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1/4 teaspoon of black pepper

Mix all ingredients in a glass bowl. Cover and refrigerate at least 1 hour, but no longer than 1 week, to blend flavors.
