This is a recipe that I first skipped over in Rawvolution by Matt Amsden. It didn’t appeal to me. My friend tried it and loved it so I gave it a try. I loved it too! It is great as a filling for wraps, as a spread for breads and crackers or for stuffing veggies.
- 1/2 cup water
- 1/2 cup lemon juice
- 1 1/2 tsp turmeric
- 2 cloves of garlic
- 1 1/2 tsp salt
- 1 1/2 cups raw macadamia nuts or cashews
- 1/3 cup scallions
- 1/3 cup celery
- 1/3 cup red bell pepper
Place the scallions, celery and bell pepper in a bowl.
Blend the remaining ingredients in a high-speed blender until smooth. Add to the bowl and mix well.
