Kale and Jerk Tempeh Wrap

A different twist on the kale wrap.

Serves: 4-5 Wraps
  • 1 recipe spicy kale
  • 2 TBL olive oil
  • 1 package three grain tempeh
  • 2 roma tomatos chopped
  • ½ green bell pepper chopped
  • 1 small red onion chopped
  • 2 garlic cloves minced
  • 1-2 tsp jerk seasoning
  • 1 tsp salt
  • ½ cup water
  • Large tortillas or wraps
  1. Make kale salad according to recipe
  2. Cut tempeh into cubes
  3. Heat oil in skillet
  4. Add onion, garlic, bell pepper
  5. Sauté until onions soften
  6. Add jerk seasoning and salt and stir to mix well
  7. Add tempeh, tomatoes and water
  8. Simmer, covered for 15-20 minutes stirring frequently
  9. Add more water if needed to keep tempeh from drying out
  10. Lay 1 wrap on large plate or other flat surface
  11. Layer ½ cup of jerk tempeh on wrap
  12. Place about 1 cup of kale salad on wrap
  13. Fold in the ends and then roll tightly
  14. Cut in half or quarters
