All Hail the Kale Salad

All Hail the KaleBy Any Greens Necessary

This recipe comes from Tracye McQuirter in By Any Greens Necessary. Read my interview with Tracye here.

  • 2-3 bunches curly kale, washed and chopped or torn into small pieces
  • 3 tablespoons extra virgin olive oil
  • 1 medium red onion, chopped
  • 5 cloves garlic, peeled and chopped
  • 2~3 tablespoons (Bragg Liquid Aminos) I recommend using Nama shoyu or Coconut Aminos instead. Braggs has a lot of MSG and should be avoided.
  • 2 tablespoons nutritional yeast
  • Cayenne pepper, to taste

Place the kale in a large bowl and pour the olive oil over it. Toss with salad tongs to make sure all the leaves are coated. Add in the rest of the ingredients and toss well. If possible, let marinate at room temperature for about half an hour before serving. Makes 6 to 8 servings.

In response to the statement that Bragg Liquid Aminos contain “a lot of MSG”, I wrote to the company. Below is their response:

Thank you for your email.

Bragg does not add any MSG to its liquid amino products. However, MSG is found naturally occurring in many foods, such as mushrooms, tomatoes, parmesan cheese, and soybeans. Since Bragg Liquid Aminos is made from soybeans, there can be some very small amounts of naturally occurring MSG. Patricia Bragg is personally very opposed to adding MSG as a food ingredient to foods, and she is very sensitive to MSG. Many of our customers who are very sensitive to MSG have never had any adverse reactions to Bragg Liquid Aminos.

Shirley, thank you for your comment. I do realize that no MSG is added however my understanding is that it is created during the making of it.
