If you think you have to give up ice cream on a vegan or live food diet you are wrong! This super easy and delicious recipe is also guilt free.
- 1 cup fresh squeezed orange juice
- 2 cups frozen strawberries
- 1 large frozen sliced banana
- 1 tsp vanilla extract
- 1 TBL coconut nectar or the sweetener of your choice (optional)
- 1 TBL cold pressed coconut oil
- dash of salt
- ice water as needed to keep blender moving
Place ingredients (except water) in your high speed blender and blend until smooth. Add water as needed to keep the mixture moving in the blender. Serve immediately.

Here is an easy way to make your own frozen fruit. The next time you find a good price on organic berries buy some extra. Or go picking at a U-Pick farm.
Wash them and slice as desired. Lay them in a single layer on a cookie sheet or a dehydrator tray and put them in the freezer. Once they are frozen put them in a plastic bag for easy use in your recipes.
I also often buy an extra bunch of bananas for the freezer. Let them get very ripe then peel them. Place each one in a zip top bag and freeze. That way if I run out of fresh bananas I can add a frozen one to my smoothies, not to mention making ice cream.
