Spinach Salad

spinachsaladAnother recipe inspired by the great food over at Lovin It Live.

Ingredients:

  • 1 bag baby spinach
  • 1 avocado
  • 1 or 2 limes juiced
  • ½ to 1 jalapeño or serrano pepper, chopped very fine
  • ½ cup chopped red onion
  • 2 roma tomatoes, chopped
  • 2 cloves garlic, minced
  • ½ red bell pepper, chopped
  • ½ cup chopped cilantro
  • salt to taste

Wash spinach and add to large bowl. Add tomatoes, red onion and red bell pepper to the bowl.

In a small bowl mash the avocado. Add the lime juice, hot peppers, garlic and cilantro. Mix well. You are basically making a somewhat thin, but not watery guacamole. Add more lime juice as needed. For more heat add more hot peppers. Add salt to taste.

Add avocado mix to the salad and toss well or use hands to spread the mix over all the spinach.

Taste again and adjust the seasoning.
